Description: Billy the Mountain is an Old Ale that blends a freshly brewed strong ale with a three year old barrel aged version of the same. The strong ale is fermented with a British Ale yeast that has great expression in our open fermented, and when combined with the aged portion yields a malty profile with bright and complex flavors, ranging all the way from oak, ash, and leather to ripe subtropical fruit. The beer was intentionally bottled still but will develop carbonation with time. When young the beer shows balance and leans on the fresh side, but patience and cellaring will increase its acidity and display the depth that only a living blend that only a living blend of young and old beer can provide as they interact
