Description: This cut from the Heart's Beat was taken from 2 of the 8 barrels from the 2016 vintage. Both were selected for their exceptional fruit character, tannic structure, & lively acidity. A 40/60 blend from those 2 casks was transferred into a keg & chilled, then hand bottled later into these 375's without priming sugar. The resulting beer, devoid of carbonation & with a very limited brettanomyces presence, displays the character of Baird Family Orchards brooks cherries in an almost distilled form.
