Description: NecTørr was brewed for the Portland Fruit Beer Festival. The brewery was lucky enough to connect with the crew at House Spirits who had recently emptied casks filled with their Gamle Aquavit, a wonderful take on a Scandinavian spirit that traditionally underwent a voyage at sea not unlike the the original India pale ales. We filled the two casks with the Six, figuring that a rye based saison is appropriate to match the aromatic left by the aquavit, but found that the spirit notes were overwhelming. To bring the beer back around, we added dried persimmon plus a pinch of pomegranate, resulting in a hugely flavorful brew that held a solid balance. The name alludes to a dry nectar because of the honey notes on the palate plus the lack of residual sugar.
