Description: For Kiwi Berliner, we wanted to put the fruit front-and-center so we kept the base beer as straight forward as possible and added over 1,200 lbs of Chilean kiwi puree. Our Berliner Weisse-style base starts with a traditional malt bill of 50% Pilsner malt and 50% wheat malt, which is inoculated with lactobacillus bacteria in the kettle and allowed to sour over the weekend, and then fermented with our Hefeweizen yeast strain. We added the kiwi puree at multiple stages to keep as much fruit character around as possible. The result is a dry, tart and sessionable sour ale with an absurd amount of kiwi.
