Description: Set'em Wild, Set'em Free is our year-round rotating Berliner-Weisse series. Each batch is brewed using the same base recipe of pale malt and raw wheat. After mashing the wort is kept very warm and innoculated with our house sour culture made up of pure L. Delbrekii and a mix of wild/native yeast and bacteria. We allow fermentation and acid formation to take place before transferring to and finishing in a fermenter with our house ale yeast.
