Description: Fermented in stainless steel with a favorite saison yeast, then transferred to oak barrels with brettanomyces for over a year for the funk demondemon. After blending the barrels it is aged on Whole Fruit Tayberries grown in the Puyallup Valley by Sterino Farms. Tayberries are a cross of Blackberry & Raspberry named after the River Tay in Scotland where they originated. The fruit do not pick easily and cannot be machine harvested. Expect similarities to its parents with a nice rosee delicate intricate sweetness reminiscent of a well made Carbonic Macerated Pinot Noir with fruity soft tannins with similar color & aromas.
