Description: TWR FLWR is a collaborative beer project initiated by Brewed Food’s Chef and Certified Cicerone, Jensen Cummings, as a celebration of yeast expression in beer. This beer started with three traditional spontaneous ales - coolship caught microbes age for eight months in neutral French oak - that were blended together to highlight each barrel’s character. We then added aged whole leaf Willamette hops and Styrian Golding hops to amp up the flavor, without hiding it, and blended in a 3-year spontaneous ale that has been aging on Montmorency and Balaton cherries. The final result highlights the spontaneous fermentation in the forefront with notes of freshly tilled soil, sweet grass, and wildflowers, showcasing all those “good bugs”.
