Description: Medovik, is our 9.7% Imperial Stout inspired by the flavors of a traditional Russian honey cake. We used a British Heritage Chevalier malt for the base and added wheat, oats and lactose to a blend of chocolate and coffee malts. We added 200lbs of toasted graham cracker to the mash and over 600lbs of clover honey to the whirlpool. Post fermentation we conditioned it on Madagascan vanilla beans and a small amount of cinnamon. Medovik is a rich, full bodied Imperial Stout highlighting the sweetness of the clover honey and rounded by more subtle notes of vanilla, cinnamon and a hint of graham cracker in the nose. Collaboration with Melovino Meadery.
