Description: Oak fermented with an array of yeast, bacteria and conditioned for longer than you think. We then blended together other like minded barrels and this all forms the base for this fruited sour beer. A serious amount of Petit Manseng grapes, sourced from our good friends at Pollak Vineyards were sent to rest amongst the blended sour beer. After an assured and lengthy refermentation, the blend was left to bottle condition for multiple months. Notes of bright tropical white grape, earthy citrus rind, with an oak like tart dry finish...a partnership of oak and grape intersected by mixed culture fermentation.
