Description: This very special collaboration project began way back in October 2017, when we partnered with Kyle Harrop of Horus Aged Ales out of Oceanside, CA to brew the biggest, richest base stout we had ever produced. With so much malt complexity from the base beer, we needed an equally complex barrel regimen, so we aged this monster in a mix of freshly emptied rye, brandy, and bourbon barrels for 24 months. After its long slumber in barrels, we conditioned the beer on a very special batch of Ethiopian Sidama coffee, which was hand-selected and roasted exclusively for the Midnight Eagle project by our friends at Mostra Coffee in San Diego, CA. This rare find from the Sidama, Bensa region in Ethiopia was honey-processed with anaerobic fermentation, producing notes of caramelized honey, dark chocolate, sugar cookie, and toffee. Finally, to complement the richness imparted by the stout, barrels, and coffee, we conditioned the beer on Madagascar vanilla beans, lending a sweet, creamy finish.
