Description: Funky Foeder (pronounced FOODER) Cherry Beer (FFCB) is a mildly sour Saison aged in large oak foeders (picture huge upright wine barrels) with tart cherries, and is brand new to the RRBC portfolio. All of RRBC's foeders came from local Sonoma and Napa wineries, and each range in age from 10 to 50 years! When RRBC moved into the Windsor facility, we started using the foeders, and these are actually the first foeders we’ve ever owned because we didn’t have space at the old production brewery. Foeders are great because they can hold a large volume of beer in wood but with a small footprint. Compared to regular oak barrels, foeders provide a much smaller wood-to-beer ratio because there is so much beer in the middle of the vessel that does not come into in contact with the wood. This also means less micro-oxygenation via the air diffusion, via the porous wood. Also, foeders often have thicker staves, meaning less micro-oxygenation compared to a regular barrel. Aging time in the Foeder is from 6 to 12 months. FFCB has distinct aromatics of cherry, with notes of raspberry, strawberry, rhubarb, red apple, light pineapple, cinnamon, oak, and floral notes. It is lightly sweet, moderately sour, and has low bitterness. It is light in body with medium carbonation and little to no astringency.
