Description: Ale Fermented in Oak Senescence is a blend of mixed culture spelt saison inspired by stories of 19th and 20th century Belgian and French farm beers. The 2021 blend was created from a selection of saison brewed with malted and raw barley and spelt during 2019 and 2020 which were allowed to ferment and mature in neutral oak. This beer was gyled with fresh wort to condition in the bottle. Bottled 05/20/2021
