Description: Kilter began as our traditionally brewed, turbid mashed spontaneous base. In the last few minutes of the boil we added 300lbs of honey to the wort and sent it straight to the coolship. After cooling overnight and letting the wort collect microbes from the air, we let it rest in one of our foeders all summer. Once we thought the beer was ready, we added raspberry and vanilla for secondary fermentation. Lightly tart and funk forward, the wildflower honey lends a floral note as well as a lingering sweetness. Raspberry leads the palate with a dry, tart profile that gives way to a light vanilla presence. Kilter is elegant and nuanced. The assertive flavors in this beer complement each other wonderfully.
