Description: || Not Sour or Funky || TOMCAT is our big, bold imperial stout, that was designed for barrel aging. Roast, caramel, and chocolate with vanilla, oak, and whiskey. It's extremely deep, rich, and complex. TOMCAT is an imperial stout fermented with our house isolated wild yeast strain. It isn't phenolic, or sour, or "funky", like most of our strains; instead it showcases the malt and is more fruit forward. This is our first imperial stout experiment created to push our wild yeast strain (we call it X-2) to its limits... eventually we hope to create a 20% ABV super stout, like CAT SABBATH.
