Description: Valkyrie is the next in our series of beer/wine hybrids. In this iteration, we have blended extreme amounts of riesling grape juice with our sour golden base. Every wine beer we make is processed manually by stepping on the grapes to break the skins and make juice. No sulfites are added and the grapes are not washed, allowing any existing bacterial yeast to remain intact during the whole process. Big tannins come together with honey and lime peel flavors from the grapes to guide you through the stonefruit and hay character from our solera blend, finishing with bright carbonation. This beer has aged for many months in oak, and has been bottle conditioning for 6 months to allow for a more dynamic and complex experience.
