Description: We pulled 3BBLs of finished Phosphorescence into the baby brite and had Bayani work on draft-exclusive variant that would further build on the tiki cocktail base concept. We added ginger, lime, and clove to bring the distinct flavors of falernum to life in the Phosphorescence base. Zingy aromas of lime, ginger, and clove translate directly and vibrantly onto the palate. These finishing additions play on the sweet, tropical base of Phosphorescence's pineapple, coconut, and almond flavors, adding another layer of complexity to this tiki cocktail-inspired Strong Ale. We finished the liquid with a nitrogen-heavy carbonation blend for a silky, luxurious texture. Falernum is believed to date back to the 1700s in Barbados, where it was made at sugar cane distilleries. Each distillery would have their own proprietary recipe; Mt. Gay Distillery claims to have been producing rum and falernum on their grounds since 1660. Their blend was based on an old Barbadian housewife's recipe. As Piercy Ward, the distillery blender, tells it, "Once, when the woman was asked for the ingredients, she answered in the dialect, 'Haf a learn 'um - 'Have to learn how it's done.' Hence the name."
