Description: A collaboration brew with our good friends from Jester King, Texas. It’s fermented with a mix of house yeasts from both breweries, which apparently loved to work together as much as we did! It’s a traditional Saison as those from 1900, with 14 months barrel-ageing. Its bouquet has a well-pronounced ‘rustic’ character, somewhere between a lambic and a farm cider, with nice woody and apple flavours. The taste is a mix of rhubarb, quince, and rye accents, with a light touch of citrus fruit, wood, and warm spices. Its final is mineral and slightly sour. At once surprisingly complex and very refreshing, like the Saisons of the old days. Only available in 75cl bottles.
