Description: Tart, vinous, wild in a suble way thanks to Lochristi Brett Blend. 48% NFC sour cherry juice. Brewed in june 2018. Aged in Château Kirwan (AOC Margaux) barrels. Each barrel held three vintages of wine (2012, 2014, 2016) for 18 months. Wine must contained mainly Cabernet Sauvignon cultivar, with small amounts of Merlot, Cabernet-franc and Petit Verdot. The beer was inoculated with The Yeast Bay Lochristi Brettanomyces blend. Couple of months before bottling we added pure NFC sour cherry juice, ratio close to 1:1 and let it ferment again.
