Description: Making a batch of Apple Bomb, which gets almost half of its fermentable sugars from the apple juice added for a secondary fermentation, we had a bit left over and couldn't waste it, so we wanted to add a fermenting beer to it, see where the flavor went in a beer that it wasn't designed for. In the next fermenter over there just happened to be a batch of Devil's Reach bubbling away, which is our strongest full time offering in terms of ABV, and just so happens to be our second most popular brew. The opportunity seemed too good to pass up, but knowing the alcohol content would rise well above 10%, even approaching 13% if the yeast could handle the work load, we wanted to run it past our taproom manager Jim, see if that would be something worth offering as a One Off. Needless to say, he was as excited about the possibility of this as us on the production team. Our house saison strain is an absolute beast, and plowed through everything we threw at it, and what was left was a way too smooth 12% beast of a beast.
