Description: We choose to use Viognier grapes from Palisade for the only white grape Cut we made from the 2017 harvest . We loved what this variety contributed to last years CFP and FS blends, and the Oak Theory funk just takes those flavors to another level. A hint of vanilla, this blend definitely straddles the line between biodynamic sparking wine and beer. Over 4 pounds of grapes per gallon of Oak Theory.
