This version still contains a crisp, light acidity & bright fruit character from our Saccharomyces, Brettanomyces & Lactobacillus cultures & 10 months in pinot noir oak, but balances this with flowers, spice & cut grass from a dry hop of 1.5 pounds per barrel of Czech Saaz.
