Description: As a style, saison is inhibited by few rules. Unquestionably, it might refresh the drinker, during the warmest part of the year. In that vein, the best ones tend toward dryness, spritzy carbonation, and fruity/peppery yeast-derived flavors. Contrary to the normal American understanding of many traditional beer styles, saison is more of an idea; a genre. In this example, we kept the body lean and dry, but pushed the alcohol content up, a touch. Finally, on the cold side, we hit the beer pretty hard with traditional German Tettnang hops. The result is a beer that shows a bit of malt character; lots of spicy, peppery, and fruity yeast notes; a the fabulous, floral, lightly earthy flavors that only Tettnang can provide.
