Starting with a base of bready Pilsner malt, this Brett Saison is accompanied by flaked rye to add a grainy character as well as provide body. The addition of earthy, floral hops supply both bittering and aroma. A blend of traditional farmhouse yeast and Brettanomyces strains give this bottle conditioned brew a fun evolution from fruit to funk, that will continue to evolve with each season. Last but certainly not least, over 60 pounds of avocado blossom honey from local Mikolich Family Honey help dry out the beer and add a rich herbal note. Drink up!
