Description: Pilsner malt and flaked rye form the base for this unique take on the saison style. A restrained amount of caraway seed and flaked onion, along with Hersbrucker hops, were added to the kettle. Following tgree days of primary fermentation with a classic saison yeast strain from yhe Wallonia region of southern Belgium, the beer was transfered to American oak barrels. Over the next ten weeks, notes of tart green apple, wood and lemon developed. Bottle condition with champagne yeast enhances a refreshingly dry, crisp, flavorful finish.
