Description: Funky Junkie is a complex barrel aged sour beer. A farmhouse style base beer is aged in wine barrels inoculated with brettnomyces and pediococcus, over a period of 2 years. This long process allows the wild yeast and bacteria to produce a smooth sourness and earthy/funky notes of lemon sherbert, leather and tropical fruit. Upfront, funky junkie’s sourness hits hard only to smooth out leaving a clean yet funky finish. Try it with a good aged cheddar or stinky wash rind for an epic food match.
