Description: This is a rye saison that was co-fermented with Brett Trois and 3711 at a lower than normal temperature in order to let the Brett compete on more equal terms with the French Saison yeast. I think it came out just right and I am extremely proud of this beer. I can drink this one all day long! It was hopbursted with Citra and Mosaic late in the boil then dry-hopped with a very large charge of Nelson Sauvin hops to give it a bright hop character. Cheers!
