Description: X2 is a reimagined version of a mead of yesteryear called Mead X. Last made in 2018. X2 features tart cherries from the Mediterranean, Black Currants from NY State, Blackberries from the Pacific Northwest blended with organic honey by way of Brazil and Orange Blossom honey before aging on oak and a blend of Madagascar and Tahitian vanilla beans. We kept it wild with a mixed culture using both Saccharomyces and Non-Saccharomyces strains originating from France and New Zealand.
