Description: HMW has taken the local concept to its ultimate conclusion with the creation of our award-winning Feral mead. Not only do we use raw and unprocessed honey and water, but Feral is fermented using wild yeast that we harvested and cultivated right at the Meadworks! The process of cultivating wild yeast is time-consuming and delicate, but the rewards are a mead that tastes unlike anything available. The flavor reflects the delicate process of creation. It has an initial smooth and slightly sweet honey flavor. At 12% ABV there is a hint of alcohol to complement and enhance the honey flavor which gives way to an amazing array of fruity and floral essences imparted by the yeasts alone. In order to best preserve the delicate flavors, we had to ensure that the mead is protected from light and sudden temperature swings. The only way to accomplish this was to find a ceramic bottle that not only insulates, but completely blocks destructive UV rays.
