Description: When we made our first drastic change to the Pale Dog recipe we decided to save a little bit of the old batch for nostalgia’s sake. We put it into old bourbon barrels and added Lactobacillus and a wild yeast strain known as Brett Brux Trois. That was back in December of 2011 and we’ve been sampling it once every month since then. Released March 2013.
