Description: A 100% Brettanomyces fermented Amber-ish ale. The Brett strain that we chose was Brett Brux again. With this particular beer we crafted the grain bill to accommodate the Brett fermentation. The grain bill was made up of Munich, Vienna and Caramunich malts, mashed at a very high temperature and carries a whopping 5 theoretical IBUs. After the boil the beer was racked into freshly emptied red wine barrels and our Brett Brux culture was pitched. 100% of the fermentation was carried out by this single yeast strain and took roughly 14 days to go from 12.5 degrees Plato down to 0.75 degrees Plato and was then aged for an additional 5 months. The beer carries huge fruity aromas with a large interplay of pineapple and tropical fruit.
