Description: A double mash hopped Thiolized™ west coast pale ale dry hopped with Citra. The Thiolized™ yeast has the ability to biotransform compounds found in malt and hops to unleash thiols — flavor- and aroma-active compounds of ripe juicy tropical fruit. Wine makers have known about them for years, but we’re just now unlocking their potential in beer. These compounds are prominent in Sauvignon blanc, Riesling, and other wines, although they do not occur in grapes. They are formed during fermentation from precursors present in grape must. Turns out those same precursors are present in hops and malt. They can contribute highly aroma-active compounds that can give very intense fruity flavor of ripe quava, passion fruit, and juicy citrus.
