Description: North Carolina sourwood honey diluted with Blue Ridge Mountain natural and unflitered spring water and fermented with Avize yeast, a Champagne isolate known for the complexity it brings to white wines. After primary fermentation this mead was back-sweetened and racked into a 5-gallon Balcones Distillery whiskey barel where it rode across the country with me as I re-relocated to Colorado. The mead aged in its new home for three months before Mexican vanilla beans were added at a rate of 1 per gallon. I havent been making mead long but I truly believe this is the mead that could convince you I’ve been doing it for years. Enjoy!
