Description: With mother nature foregoing the snow this year we decided to bring some white to your winter, in the form of White Shadow a double-white strong ale. Brewed with wheat malt and fermented with a belgian wit yeast. (belgian wits are often referred to as white ales) The yeast adds a touch of tartness, fruitiness and a mild amount of clove. This beer is medium bodied and creamy with a cracker malt character. It was then dryhopped with galaxy, sorachi ace and zythos for a zesty fruity hop nose/flavor. Finally it was finished with White tea to add another layer of flavor and complexity. The tea adds a bit of maltyness to the brew and also contributes some jamlike character, as well as lending some tannins to the finish.
