Description: Troy Cider is at the forefront of reviving this tradition, using only pure fresh-pressed fruit, unfiltered and left to naturally ferment in used wine barrels for 8 months to a year. Naturally fermented means that the juice was not inoculated with commercial yeast, but instead fermented by native yeast living on the fruit, in the atmosphere and sometimes in the barrel itself. Troy is also one of the few ciders on the market that doesn’t add sulfites, a commonly used preservative of fruit wines. All the apples and pears in the MMXIII (2013) vintage were foraged for and, given the severance of chronological record, don’t even really have names anymore. I invite you to marvel at the simple pleasure of raw, naturally fermented, unfiltered cider- sediment and all.
