Description: We teamed up with our brethren from Monkish Brwing Co. to brew this bastardized, inter-county, Belgian-style Pale Ale. We used Bohemian Pilsner malt, lots of Amarillo and Mosaic hops, fermented it with the Monkish house yeast and bottle-conditioned with Brettanomyces. Drink now to enjoy its fresh, hoppy aroma or cellar at 55f for up to 2 years to allow the brettanomyces yeast to beautifully change the beer over time.
