Description: The first in the series is a New England Saison comprising of 6 malts, heavy on oats, wheat and spelt to deliver a creamy mouthfeel and enhanced by the mineral rich water. WLP565 is the yeast strain of choice, a classic Belgian yeast from Wallonia, it produces earthy, peppery and spiced notes. A small flame out addition of Galaxy, Citra and Mosaic hops in the kettle were backed with a double dry hop post-fermentation using the same hops in vast quantities for flavour of mango, passionfruit and citrus.
