"Riserva" sticker on the label, red seal. || ust like the Barriquée, the Riserva is ‘triple-fermented.’ Primary fermentation takes place in stainless steel. What sets the Riserva apart is the next step: 15-18 months spent in wine wooden vats, compared to the Barriquée’s 8-10 months; the wooden vats were used previously for Barbera (red wine), for maybe 150 years. This adds an elegant wine-like quality and a dry, oaky character to the deep, earthy, sourness that the Barriquée is known for.
