Description: Brewed by Casey Conley as part of the Perrin Brewer Series, Redbeard’s Ryevenge is a riddle wrapped in a mystery wrapped in an enigma. Is it a rye beer? Is it a Brett beer? Is it an IPA? The answer is...it is ALL THREE!!! Rye was only 7.5% of the grain bill so you get a subtle spiciness and dry finish. This beer was hopped with over 75lbs of Amarillo, Ella and Motueka hops. Fermented using Brett Trois yeast which offers nice tropical phenols and a slight funk. Olive oil was used in the whirlpool to produce oleic acid, which is normally produced by yeast synthesizing oxygen. Essentially, skipping the “middle man” of aerating the wort.
