Description: Eunoia 11 is an imperial stout built from our house "recipe 2" base stout that we aged in a blend of 80% Heaven Hill, 10% IJW Bourbon and 10% IJW Rye Whiskey casks for a length of time between 17 and 18 months. After aging in casks for a year and a half, the stout was then aged on Ghana Cocoa Nibs, Honey Graham Crackers, and Marshmallow. The resulting beer is packed full of flavors of milk chocolate, distinct graham cracker, creamy vanilla and of course char, smoke, and whiskey notes from it's time spent in casks.
