Description: The first of our dry ciders - lovingly named after the Irish folk song of the same name by Christie Moore. Produced from 50% apple juice and 50% honey which have been fermented together until almost dry. It has only a hint of sweetness remaining with a crisp apple aroma enhanced by the citrus notes of Cascade and Citra hops which were added during conditioning.
