Description: Brewed at Red Duck by Anders Kissmeyer of Kissmeyer Beer and Scott Wilson-Browne of Red Duck There is one particular ale, famous around the world, which is brewed in the Val d’or, in the region of Gaume in Belgium. It is a small, unusual ale, with pronounced spiceyness, a little tartness and plenty of funk. The malt base for this ale is quite simple, and we fermented first with a simple Belgian yeast strain, then created a second fermentation by adding some more sugars and 2 different Wyeast lambic yeasts which included a wild yeast strain isolated from Belgian lambic beers, a sherry strain, two Brettanomyces strains, a Lactobacillus culture, and a Pediococcus culture. Because of the careful fermentation, where the Lambic and Roeselare yeast only had very little to work on, our Gnaume shows very soft Belgian spiceyness and lambic characters, with a very subdued “Brett” character. A pellicle has formed in some of the bottles, which is a harmless white “floaty”. Curiously not all bottles developed this, and the pellicle doesnt remain solid in most cases when the beer is poured. Red Duck Gnaume offers a bit of Belgian spiceyness, with a pleasing soft, tang, and some interesting flavours over a broad pallet. Its a really refreshing, Belgian styled lambic golden ale. Our very first Lambic ale, is a beauty, somewhere between the magic of a Gnome, and the magic of that famous ale from Gaume. We love it so much, that we will brew it again!
