Description: A saison is a French Farmhouse ale that was often made with additional ingredients besides hops, and a wild yeast that would give additional spicy flavors and a slight tang. We ran with this idea, and tried to make a beer that tastes like a Gin and Tonic. The beer is light and moderately bitter, with the traditional spicy yeast flavors from French Saison yeast. We then add juniper berries, coriander, cardamom, and lemon peels which give the beer a citrusy, piney character similar to a gin and tonic.
