Description: Missouri Wild Ale with Illinois Quince As with Satsuma and Yuzu, we used a very delicate base to allow this extremely aromatic fruit to shine. Quince started as a Lagerbier, similar to the base of Sunsets, which we then finished in oak with our Side Project mixed culture. Once mature, we allowed it to re-ferment on Illinois-grown Quince (sourced by LC member Will Bresnahan!) from the 2020 and 2021 harvests. This beer started life in 2020 and then became a blend of both harvests providing the depth and complexity only found with time from the older thread and then the explosive green apple jolly rancher and vibrant aromatics from the youthful fruit expression of the younger thread.
