Fermented with an American farmhouse yeast strain and bottled carbonated with 2 mild yet fruit forward Brettanomyces strains. Bloody Butcher is an antique red dent corn grown for over 200 years in the USA and known for its rich, nutty and fruity character Jimmy Red is a nearly lost high protein red dent corn. This variety was saved from extinction 20 years ago by the discovery of the only 2 remaining cobbs in existence.
