In essence, it was a little like a baker’s sourdough mother, alive with life forms from its surroundings. This bottle captures the life work of these beings in beer form. A take on a rye sourdough bread, this is a rye ale fermented using Gregoire Michaud's sourdough starter, which started in Hong Kong. It is dry, has a rye+ oak kick with a touch of sourness and bit of funk.
